Este año, el programa del Foro tiene como eje principal un “Mano a Mano entre cocineras tradicionales de México y de España”. Se trata ante todo de reforzar los lazos entre las culturas culinarias que dieron lugar a la cocina mestiza de hoy, con sus fuertes raíces autóctonas y su capacidad de incorporar a las otras cocinas del mundo. Con temas relacionados con la cocina tradicional, su diversidad, sus relaciones de ida y vuelta con América, sus retos en el presente. Participan cocineras tradicionales que trabajan con productos de origen mesoamericano: Andalucía y el tomate, Extremadura y el pimentón, Asturias y el País Vasco con el maíz, Cataluña y el chocolate.
El VII Foro aborda con especial énfasis las cuestiones más urgentes relacionadas con la alimentación, la salud y el medio ambiente después de la pandemia que ha modificado el mapa y la visión de las prioridades del desarrollo de la gastronomía.
Reanudamos los Foros convocando, como siempre, a la comunidad académica, a los estudiantes y docentes, a los productores e industriales de la alimentación, a los promotores del turismo cultural, a los artesanos, y al mundo que rodea y enriquece los procesos de la gastronomía como actividad esencial del desarrollo sustentable.
